Everything we collect goes to one place: a community compost site in South Brooklyn, operated by our nonprofit affiliate Earth Stewards NYC. It stays in the borough. Nothing is trucked upstate and nothing goes to a digester.

The site processes two tons a week. That is a real ceiling, so as it fills we either pause signups or partner with another community compost site that has room. What we will not do is truck the material out of the city to keep growing.
A full 5-gallon bucket of food scraps averages about 20 lbs, so two tons is roughly 200 buckets a week across the whole route.
